1. Warm the blinis for 30 seconds in a microwave or place individually on a baking tray and heat under the grill for 5 minutes.
2. In a small bowl mix together the crème fraiche, mango (or other fruit of your choice) chopped coriander, lemon rind and black pepper.
3. Spoon the mixture onto the blinis or toasts and top each with a folded slice of turkey breast.

- 16 Cocktail Blinis (or small melba toasts)
- 150g tub crème fraiche
- 1 small mango peeled and chopped
- Small bunch coriander, chopped
- Grated rind of 1 lemon
- Freshly ground black pepper
